Execution:
To a molcajete or mortar and pestle, add cilantro, onion, serrano, lime juice, zest and a generous pinch of salt.
Begin mashing this mixture until it forms a thick, dark green paste and all the ingredients are broken down.
(This can be accomplished using a food processor, or the ingredients can be hand-chopped. However, the oils, flavors, and aromas present in these ingredients are more effectively released when using a molcajete.)
Add your avocados and pound until everything is thoroughly mixed and the the mixture is smooth. Season to taste with salt and lime juice.
Ingredients:
4 ripe hass avocados.
1/2 small Spanish/Vidalia onion, small dice.
small bunch cilantro leaves & stems.
juice and zest of 1 lime.
1 serrano/jalapeno chili, chopped.
kosher salt.
Equipment:
Molcajete or mortar & pestle.
Mashed avocados using a molcajete, seasoned with lime juice, chili, onion and cilantro.
