goated cucumber salad.
Ingredients:
3 persian or 1 english cucumber, grated
1/4 cup roasted peanuts, chopped.
2 tbsp grated coconut.
1 tsp chaat masala.
salt.
big pinch of sugar.
lemon juice.
handful chopped coriander leaves.
2-3 tbsp full-fat greek yogurt.
tadka; (infused oil).
2 tbsp neutral oil.
1 green chili, chopped.
1/4 tsp asofetida.
1/2 tsp cumin seeds.
1/2 tsp yellow mustard seeds.
1 garlic clove, grated.
1 sprig curry leaves.
Equipment:
bowl.
strainer/colander.
saucepan.
Yield:
1 cup salad.
Execution:
season the cucumber.
Season the grated cucumber with salt and sugar to taste.
Place in a strainer or cheesecloth and squeeze out as much water as possible.
2. tadka.
Add the oil to a small saucepan.
Heat over medium heat.
Add the cumin, mustard and asofetida, cook until the sizzling starts to slow down then add garlic, curry leaves and green chili, cook until fragrant, then cut the heat, use immediately.
3. mix.
Add the drained cucumbers to a bowl, pour the tadka over the cucumbers and mix, add the rest of the ingredients and season to taste.
