RICE & PEAS.

Ingredients:
1 cup peas, (pigeon peas, kidney beans or any red beans.)
1.5 cups basmati rice.
3 scallion, chopped.
1/2 yellow onion, small dice.
1 bay leaf.
3 cloves.
1/2 tbsp garlic powder.
1 tsp allspice powder.
6 sprigs thyme.
1 tbsp ginger, grated.
1 tbsp chicken bouillon.
2 tbsp grated coconut.
1 398mL can coconut milk.
1 scotch bonnet pepper.
kosher salt.
1 tbsp ghee or butter.
Equipment:
Yield:
~3 cups rice and peas.
Execution:
soak peas.
Soak the beans in double their volume in water overnight.
2. cook peas, cook rice.
Drain the beans, and discard the soaking liquid.
Add the beans, onion, ginger, garlic powder, allspice powder, ghee, bouillon, scallion, bay leaf, clove, scotch bonnet and thyme to a pot.
Add 2 cups of water and bring to a boil.
Reduce to low and simmer, cover with a lid and cook until the peas are 80-90% cooked.
Add the coconut milk, and season the liquid with salt until it tastes overly salted.
Wash the rice until the water runs clear.
Add the rice, boil, cover with a lid and reduce to low.
Let cook for 15 minutes.
Take off the heat and leave covered for 10 minutes.
Fluff the rice, remove any whole aromatics and serve.
